Pasta is one of my favorite and I keep making it in different styles. Few times my experiments do tend to boomerang but there are times where it turns out to be tasty and yummy.
Today I am going to share with you the recipe of Chicken Pasta in Arabiatta Sauce. If you are vegetarian than you can skip adding chicken and supplement it with some other veggies that you desire (capsicum corn and so on) .
In arabiatta sauce penne pasta is used, since I did not had penne pasta on hand, used Fussili as a substitute . Arabiatta Pasta is made without adding any veggies just a good amount of tangy flavor sauce but since this is my version I get to do what I feel like :))
Lets see how to prepare this yummy pasta.
Pasta - Penne ( I have used Fussili as a substitute)
Chicken - few boneless piece cut in small portions
Garlic- 6-7 nos
Tomato puree made of ripe red tomatoes 4-5 medium size (depends on how saucy you want your pasta to be)
Parsley or Basil- 1tsp
Black pepper Powder - 1tsp
Chilli Flakes - 1tsp (depends on how hot you want your pasta)
Oregano - 1tsp
Capsicum - 1/2
Onion - 1 small
Boil pasta by adding little olive oil. Make sure that pasta is not over cooked. Once done, drain it and keep aside.
Put olive oil in another thick bottom pan, add finely chopped garlic and stir, till it is slight brown. add little chilli flakes, tomato puree and let it simmer for 15-20 minutes, to be reduced to half the quantity.
Take a pan, add 2tbsp of olive oil, than put finely chopped garlic till slight brown, add chicken, red chilli flakes and stir it. Add onion and Capsicum (again these are optional if you want to make the pasta in pure Arabiatta sauce then skip adding these).
Add Parsley / Basil, black pepper powder and stir it, now add pasta to it and mix everything thoroughly.
Put the above pasta mix in the tomato sauce, that you left to simmer, add salt and mix well .
Remove the above pasta in a bowl or a rounded plate and garnish it with parsley and Parmesan cheese.
