Ingredient: Matki , Onion 2-3Nos , Tomatoes 2 Nos, Green Chillies - 2-3 (depends on how hot you want it), Tumeric Powder - 1tsp, Coriander Powder - 1tsp, Zeera Powder (Roasted) - 1/2 tsp , Garam Masala - 1small tsp, Ginger Garlic Paste - 1tbsp, Bedekar Goda Masala - 2tsp, Salt and Oil.
First boil the Matki in a pressure cooker (Atleast 4 whistles) and keep it aside.
Take oil in a pan, add finely cut onion and fry it till the onions turns soft into soft brown, add Zeera and saute for another 2-3 min.
Add Ginger Garlic paste, Tumeric, Coriander and Zeera Powder and saute well for 5 minutes, then add Tomatoes, Green chillies, Garam Masala and Goda Masala and cook well till the tomatoes are fully smashed and masala is sauteed well.
Once the masala is cooked well add boil Matki (don't throw away the water from the boil Matki, you can add this water along with the Matki to the masala). If the need be add more water as per the desired consistency. Add salt and let it simmer for 10-15 minutes.
Your Matki Usal is ready :) you can garnish it with coriander leaves, Tomatoes, Onion, Sev and serve it hot. Here i have garnished only with Green Coriander. Matki Usal and rice goes really well together. Try it out !!!.
