Aloo Wadi (Patra)

My name is Dipti Kocharekar and I am writing on a blog for the very first time. Today I am going to share with you the recipe of Aloo Wadi (also called as Patra), which I made at home recently. 

Ingredients

Leaves – 10 – 12 of Aloo (Colocasia Leaves)
Ginger – 50 – 55 gms
Garlic – 100 gms
Green Chilles – 7 nos.
Red Chilly powder – 1 teaspoon
Turmeric Powder – ¼ teaspoon
Salt as per taste
Coriander leaves – 4 medium judies
Kokam Juice 3 tablespoon or tamarind water of 30 gms (Tamarind to be soaked one night previous in little water to make thick paste)
Besan 250 gms 

How to Prepare: 

Make paste of ginger, garlic, green chilles & coriander leaves.
Add red chilly powder, turmeric powder, salt, kokam or tamarind juice to the above paste. Mix well
Now keep on adding besan till the paste is thick as shown in the below picture.


Clean the leaves thoroughly under water & wipe it well so that there is no water left on it. (If there is water on the leaves, the paste will become thin & wadi’s wont come out well). Now cut the steam of the leave & roll with the chappati maker (belan) on the light green side to make it plain


Take some amount of above paste & apply on the reverse side of the leave as shown in the above pic

Please note that the paste side will be facing up and all the leaves should be arrange or kept one above the other as shown in the above picture.  


Make sure you are using max 5 – 6 leaves for one roll.After applying the paste on all 5-6 leaves, roll the leaves in below sequence:


Once you have rolled the leaves, use thread to secure the roll. (so that it does not open up while steaming)





 
Now steam the rolls for 30 minutes. Let it get cool down, remove the thread & cut it into pieces as desired. Shallow fry the above cooked wadi's in little quantity of oil. Remove it on the tissue so the access oil will be soaked. 




Aloo Wadi's are ready to be served. Enjoy the hot Aloo Wadi's with a sauce. This can be served as a snack item or a starter.
